Crochet Question

redfiona99I may be slowing defeating the crochet demon but I need to know, is it supposed to lie flat? When I do squares they come out ... ridged. Are you supposed to not turn or turn the piece at the end of each row? I think it's one of those obvious questions that are too obvious for the crochet magazines to mention.
