Because there's so many options.
The obvious one is the thing in Wrath of Khan that makes me cry every time. Despite the fact that Search for Spock was the first Star Trek film I saw. So I know what happens next, but still, every single time.
I think it's the build up to it, the imminent danger to the ship which means that Spock has to make his sacrifice, and the logic of it, and that moment where Kirk hears that the ship isn't in danger, and is told to come to Engineering quickly and sees that Spock is missing and puts two and two together, and wham!
(Actually, lots of Wrath of Khan is wham, see also Midshipman Preston.)
